Easy Personal Pizza and Wings

Simplified personal pizza and healthier baked chicken "wings!"
Baked Chicken "Wings"
- 2 chicken breasts ((roughly 1 lb))
- 1 cup flour
- 1 tbsp italian seasoning
- 1/2 tbsp garlic powder
- 1/2 tbsp mild rub ((optional))
- 1 cup bread crumbs
- 1 tbsp Blackstone chicken griddle gourmet seasoning ((substitute with chicken seasoning preference))
- 1 tsp crushed red pepper ((optional if you want more of a kick))
- 1/2 tsp black pepper
- 4 large eggs
Personal Bagel Pizza
- 4 bagels ((8 halves make 8 personal pizzas))
- 1/2 cup pizza sauce ((add as much as you'd like!))
- 1-1/2 cups mozzarella cheese ((adjust to your liking – I also use Daiya brand))
- 32 slices pizza pepperoni
Preheat oven to 450 degrees F
Prep chicken by cutting into roughly 24 – 1.5" pieces
Mix flour, italian seasoning, garlic powder, and mild rub (optional) in a shallow bowl
In a separate shallow bowl, mix bread crumbs, Blackstone (or other chicken) seasoning, crushed red pepper (optional), and pepper
In a 3rd bowl, beat eggs
Dip chicken pieces in egg, then flour mix, dip in egg again, and lastly dip in bread crumb mix
Place coated chicken pieces on a lightly greased cooking sheet
Bake chicken for 12 minutes total, flipping half way through (check for internal temp of 165 degrees F)
While chicken is baking toast 4 bagels (8 halves)
Top each bagel with 1 tbsp sauce, 3 tbsp mozzarella cheese, and 4 slices of pizza pepperoni (adjust these ingredients as you'd like)
When "wings" are done baking, use your favorite wing sauce and coat baked chicken pieces generously
While the chicken cools down, put bagels in oven for 5-7 minutes or until cheese melts (Daiya cheese tends to take longer to melt)
